The 12 Days Of Christmas Cookies *Day 3*

Ingredients:
  • 1 and 1/4 cups butter, softened
  • 1 cup sugar
  • 2/3 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 1/4 cups flour
  • 4 packages (or 3/4 cups) hot cocoa mix
  • 1 teaspoon salt
  • 1 1/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup chocolate chips
  • 1 cup Marshmallow Bits or Mini Marshmallows
Instructions:
Heat oven to 350°F. Beat butter and sugars in large bowl with standing mixer until light and fluffy. Add eggs and vanilla; mix well.
Combine next 4 ingredients. Gradually beat into butter mixture until blended. Stir in chocolate chips and Mallow Bits. Cover and chill 1 hour.
Drop 2 tablespoons dough, 2 inches apart, onto baking sheets. Bake 9 to 11 minutes or until edges are lightly browned. Cool on baking sheets 5 minutes; remove to wire racks and cool.

*Shout out to Crazy For Crust for this one*
INGREDIENTS:
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla
  • 2 1/4 cups flour
  • 1/2 teaspoon salt
  • 1 cup mini chocolate chips
  • Additional powdered sugar, for rolling
DIRECTIONS:
  1. Preheat oven to 375°F. Line two cookie sheets with parchment paper.
  2. Mix butter, 1/2 cup powdered sugar, and vanilla with an electric mixer until fluffy. Add flour and salt and mix until the dough comes together. Stir in the chocolate chips. If dough is too soft, chill it until you can work it easily with your hands.
  3. Scoop 1 tablespoon balls of dough and place on prepared cookie sheet.
  4. Bake cookies for 7-10 minutes until bottoms are just slightly brown. Remove from oven and cool for just a minute, until you can handle them. Fill a small bowl with powdered sugar and roll each cookie in the sugar until coated. Place on a rack to cool.  (Once cookies are cooled, you may want to re-roll them in more powdered sugar.)

Starting the 12 days off with a family favorite. No Bake Cookies.
SERVINGS:
20-24 COOKIES
PREP:
5 MINUTES
COOK:
5 MINUTES
Ingredients:
  • 1/2 cup butter
  • 2 cup granulated sugar
  • 1/2 cup milk
  • 4 tbsp cocoa powder
  • 1/2 cup peanut butter
  • 2 tsp vanilla extract
  • 2 and 1/2 cup quick-cooking oats us
instructions:
  1. Melt butter in a saucepan over medium heat.
  2. Add granulated sugar, milk, and cocoa powder to saucepan. Bring to a boil and let cook for 1 minute.
  3. Remove from heat and stir in peanut butter and vanilla extract. Once smooth, add in the oats and stir until completely coated. Let mixture cool for 5 minutes.
  4. Drop 1-2 tablespoons of the cookie mix on to a baking sheet lined with wax paper.
  5. Let cookies cool at least 30 minutes before eating. Store in an air tight container.

If you haven't seen my latest blog post. Today I have announced that I will be posting The 12 Days Of Christmas Cookies. Starting on the 12th and ending on the 24th. I will be posting fun and delicious Christmas themed cookie recipes.  One recipe I will be posting is called Chocolate Chip Snow Balls. So keep an eye out for it. I hope you like it. And I promise I will be posting every day of the countdown.
