Almost all December long I have talked about how I was on the search for the perfect Christmas Cupcake recipe. I wanted it to be Christmasie but not overwhelming. I posted a bunch of the recipes I liked best in the Baking tag. Once I picked the one I liked best I teased you guys by saying I knew what it was going to be but never told you which one I chose. The Christmas Themed Cupcake I chose this year was the Ferrero Rocher cupcake with Nutella frosting. *you can see the recipe here* Although I did put my own special twist on it. I did make Nutella frosting but I didn't follow the recipe the gave. I used my mom's recipe for frosting and added 2 Table Spoons of Nutella. Even though Christmas is over *I hope you all had a wonderful one and are now relaxing* and the new year is right around the corner, I think I will keep posting baking things on her threw out 2015... And maybe I will post a few video's of myself baking as well. *I have 3 non baking vlogs I have to post as well* As I was baking these cupcakes *which btw turned out to be a hit.* I took a few pictures leading up to the final product. And now that I think of it I'm kicking myself a bit for not taking a picture of someone eating the cupcake....

I haven't posted a baking recipe on here in a little while so I thought I would share one today. One of my favorite candies is Caramel. I love it in cakes on ice cream in my coffee. By itself. Sometime s I will even put it in my milk. Don't knock it until you try it. It's actually really good. The best kind of caramel is salted caramel. Caramel-flavored coffee syrup can be found by the coffees and teas in the grocery store. You do NOT want to use Double Stuffed Oreos. recipe adapted from Betty Crocker This sounds A-mazing! I love adding little surprises inside cupcakes. One of my fav cupcakes to make are my Tric's Chocolate Chip Cupcakes. They are chocolate cupcakes with chocolate chips inside. With cream cheese frosting. So this recipe is right up my alley. As you all know by now I have been searching for the best Christmas themed cupcake recipe for my Christmas Cupcakes this year. While I was searching this little recipe caught my eye. Truffles are one of my guilty pleasures in life. I have never met a truffle I didn't like. And who doesn't like Cocoa? I'm really considering attempting to make these. --------------------------------------------------------------------------------------------Ingredients: Yield: 15 truffles 2 3/4 cups semi-sweet chocolate chips 1 cup heavy cream 1 tablespoon sugar ¼ teaspoon salt 2 teaspoons vanilla extract cocoa powder, crushed candy canes, mini chocolate chips for rolling Directions:
1. Place all ingredients in a pot and melt together on low heat until smooth. Stir constantly. 2. Let cool in the fridge until stiff enough to scoop. 3. Make small scoops, about 2 Tablespoons each. And place them in the freezer for and hour. 4. Remove scoops, roll into balls. 5. Roll in your choice of decoration. Crushed candy cane, cocoa, cinnamon, mini marshmallows. (If you try the mini marshmallows, you really have to push the marshmallows into the chocolate balls.) 6. Wrap each ball in suran wrap and keep chilled until ready to use. 7. When ready, drop chocolate balls into 1 ½ cups of hot milk and stir! Yep another Cupcake recipe post. I'm still on the hunt for the perfect idea for this years Christmas cupcake. This one combines 3 of my favorite things. 1- Ferrero Rocher candy 2- Nutella and 3- Cupcakes. Even if I don't make this for Christmas this recipe is for sure going into the cupcake recipe vault. Zoella and I'm pretty sure I have mentioned Pointlessblog a time or two. Another channel that I really love is the SacconeJoly's. Anna Saccone has a side channel. From time to time she makes cupcakes and shares the recipes. Last month she made Pumpkin Spice Cupcakes with her daughter Emilia. Turns out the recipe Anna uses in the video is the same one I used for my pumpkin spice cupcakes. They turned out to be really good. And are a must have for any pumpkin lover. So I have decided to share Anna's video with you. You cant possibly be talking about Christmas for another 2 weeks." And I get it. I totally feel you on the whole Thanksgiving is becoming the forgotten holiday. But its never a bad time to think about cupcakes and never too soon to start thinking of Christmas baking. When it comes to my family and baking I'm all over the cupcakes. Cupcakes are my thing. The best way to describe it is if you have seen Glee you know Rachel says that gold stars are her thing? And they are everywhere? That's how it is with me. One day I would love to open up my own cupcake/coffee shop. I already have the name picked out. Although it may never happen its still nice to dream about it. Now back to what this blog was really about. Christmas Cupcakes. When ever there is a holiday or big event in my family I make cupcakes. When it comes to the Holidays I always try and theme the cupcakes to the Holiday. For Christmas I have already done Hot Chocolate cupcakes with homemade marshmallow whipped frosting. Last year I did candy cane cupcakes. This year I want to do something Christmasy but I want to add my own special little fun twist to it. So this afternoon I have been hunting around online for just an idea. I thought I would share one of my favorite ones with you. It's called a Pumpkin Nutella S'mores Cupcake. I made pumpkin cupcakes last year for Thanksgiving. They were so good. And I absolutely love Nutella I put it on basically anything. In my mind its never to late for Nutella. Plus S'mores never get old. If I don't make these for Christmas then I will definitely hold onto this recipe for another time for sure. If you make them or have made them or even eaten them let me know how it was in the comments. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Ingredients: Pumpkin Cake: 1 2/3 C. flour 1 tsp. baking soda 1/2 C. sugar 3/4 tsp. salt 1/2 tsp. cinnamon 1/2 tsp. nutmeg 1/4 tsp. ground ginger 1/2 C. oil 2 eggs 1/3 C. milk 1 C. pumpkin puree 6 graham crackers, crushed Nutella Frosting: 1/2 C. butter, softened 1/2 C. Nutella 2 Tbsp. unsweetened cocoa powder 1 Tbsp. milk 2 4 C. powdered sugar Large Marshmallows for decoration Directions: 1. Preheat oven to 350 degrees and line pans with cupcake liners. 2. Sift flour, baking soda, sugar, salt cinnamon, nutmeg, and ground ginger together (or you can use pumpkin pie spice instead of the the separate spices). 3. Add oil, eggs, milk and pumpkin puree and stir until smooth. 4. Sprinkle a heaping teaspoon of crushed graham crackers on the bottom of each cupcake liners. Shake the pan to level the crumbs then fill each cupcake liner 3/4 full of batter. 5. Bake for 15-17 minutes or until an inserted knife comes out clean. 6. Nutella Frosting: Beat butter and Nutella until smooth, Add cocoa powder, milk and 2 cups powdered sugar. Continue to add in more powdered sugar until you reach your desired consistency. Add more milk if it's too thick. 7. Place large marshmallows on a cookie sheet covered in foil and place in the oven and broil for 1-2 minutes. OKAY, you have to sit there and watch them broil or they will burn. Let them get toasty and then pull them out immediately! Sometimes I'll pop them in the freezer to blast chill them so they don't lose their shape. 8. Pipe Nutella frosting on cooled cupcakes, sprinkle with extra graham cracker crumbs and then top with a toasted marshmallow. XO That One Girl
